Afterwards, we drive across the vast countryside of the Madonie Park showcasing Sicily’s great variety of landscapes. The territory of the Madonie mountains is a paradise of earth and sky, tucked away on the island. We soon arrive in Polizzi Generosa—a lovely town nestled in the heart of the Madonie Natural Park in Palermo province.  Step back in time viewing the ancient masserie transformed into a farmhouse, the flour mills evidencing the plentiful water supply of the area, and the furnaces used today, as in the past, to make ceramics. Light lunch at country trattoria to taste typical local dishes. This afternoon we will continue to Taormina, the world famous resort town of Sicily. (BB L)

Day 6 (Thursday) Northern Malta & Gozo Scenic Tour
This tour will take you en route via the north of Malta passing St. Paul’s Bay, this is where St. Paul was shipwrecked in 60AD. We proceed further north, passing the pretty hillside village of Mellieha which offers stunning views overlooking Ghadira Bay before arriving at Cirkewwa for our ferry crossing to the sister island if Gozo. Our short 25 minute ferry crossing passes the smaller island of Comino. The charm of Gozo is apparent the moment you arrive there. Greener, more rural and smaller than Malta. Our tour is a combination of scenic spots and local culture. We will pass through quaint sleepy villages that characterise Gozo's unique charm, visit stunning sites such as Calypso Cave which offers magnificent views over the red sands of Ramla Bay. Just before lunch we will also stop at the Fontana Cottage where you can sample local delicacies such as sun dried tomatoes, olive pate, local cheeselets, wines, liqueurs and anything made locally, you will also have some time for a spot of shopping for popular buys such as lace. Free time for lunch at a local restaurant. After lunch we continue our tour with visits to one of the most photographed sites in Gozo, the Azzur Window and Inland Sea. Here you can take an optional boat trip (the boat trip is not included in the overall price as it operates subject to weather conditions, EUR7.00 paid on the day) around the sea locked lake. Our final stop before we head back to the ferry for Malta includes a visit to the main town on Gozo, Victoria and The Citadel. The Citadel is a small fortified city that dominates the heights above Victoria. The history of The Citadel dates back to an early period when Gozo was under Roman and Arab occupation. The views from its fortified walls offer panoramas of the whole island. Our tour comes to an end and we make our way back to the ferry terminal for our return to the main island. (BB)

SPAGHETTI
Italian Spaghetti

Spaghetti, the most famous variety of pasta, are the oldest shape known. Historically, the first official usage of the name spaghetti dates back to 1819, as evidenced on the pages of the first Italian dictionary. The name spaghetti means “lengths of cord” in Italian. Spaghetti are long and round, with a thickness that varies from region to region. It is often debated whether long pasta should be broken before cooking. Purists believe in keeping it whole; pragmatists believe that cooking and eating it is simplified by breaking it in two pieces. Spaghetti when cooked, becomes graceful and elegant, maintaining its authentic shape. Most long pasta are designed to be served with simple sauces. Spaghetti pairs well with tomato sauces, vegetables and aromatic herbs. Spaghetti is extremely versatile and complimentary pasta well suited to an infinite number of sauce varieties. Typical dishes are Spaghetti alla Puttanesca with olives and capers and Spaghetti alla Carbonara with pancetta and eggs and Spaghetti alla Norma with fresh tomato sauce and fried eggplants. Gently rolling Spaghetti with a fork gathers the pasta with the sauce, delivering a delicious taste sensation in every forkful.
