CHEESE IN MALTA |
|
 |
|
It is in
traditional Maltese recipes that one truly discovers the effect of a
blend of influences of several cultures, along with the island's
Mediterranean character and seasonal availability.
In years gone
by, the typical Maltese housewife had to make do with whatever was
available (which was often little) to feed hungry, farm-working
families (which were often large). Throughout the ages, creativity and
resourcefulness have had to be the main ingredients constituting
Maltese gourmet.
Maltese snacks
and dishes have since developed into simple, easy-to-prepare artwork.
The
Gbejna (my favorite Gozo-Malta cheese) is a
round-shaped goat's milk cheese let produced fresh, peppered or plain.
For the real
thing, avoid purchasing the pre-packed supermarket type. Go for the
preserved (in oil, wine or vinegar) peppered ġbejniet
that come in glass jars at little grocery shops. Most wine bars have
their secret ġbejniet suppliers. Try with galletti
and an Kinnie, the typical maltese soft-drink.
Kinnie was
originally developed by Simonds Farsons Cisk in Malta in 1952, as an
alternative to the innumerable colas that had proliferated in Europe
since the Second World War.
Kinnie is a
unique tasting, alcohol-free, natural, refreshing beverage. Its golden
amber colour, and the fact that it is made from bitter oranges and a
variety of aromatic herbs, lend this beverage a bitter taste which is
an excellent thirst quencher. This drink is ideal on its own,
particularly with a slice of orange. It also mixes excellently with a
number of alcoholic drinks and cocktails. |
